Zatello Cocoa Supply is an origin-side processor and exporter of bulk cocoa ingredients — powder, butter, liquor and beans — supplying food manufacturers, chocolatiers and cosmetic formulators worldwide.

Who we are

Close to the farm, fluent in the trade.

Most cocoa that reaches a European or Asian factory has passed through four or five hands. Every one of them adds cost and removes accountability. Zatello was built to shorten that chain.

We buy directly from farming cooperatives at origin and control what happens next: fermentation, drying, roasting, pressing and milling all take place under our own quality regime. When we hand you a certificate of analysis, it describes cocoa we actually handled — not a document passed along with a shipment we have never seen.

That matters commercially as well as ethically. It means we can hold a specification, repeat it lot after lot, and answer a technical question without making a phone call to someone else.

What we stand on

Three commitments we will put in writing.

Specification, held

The fat content, pH, moisture and bean count you agreed are the ones that arrive. Every lot is tested and documented before it leaves.

Sample before contract

You never commit to a container on the strength of a photograph. Physical samples go out by courier so your own lab can decide.

Verifiable, on request

Company registration, export licences and trade references are available to any serious buyer who asks for them.

From bean to container

Six stages, all under our own roof.

This is what origin-side processing actually means day to day — and why we can hold a specification lot after lot.

Stage 01FermentationFive to seven days in wooden boxes. This is where cocoa flavour is actually made, and where most of the difference between a good lot and a poor one is decided.
Stage 02Sun dryingBeans are turned by hand on raised racks until moisture is down to 7–7.5% — dry enough to travel and store without mould.
Stage 03Sorting & gradingHand sorting against ISO 2451: flats, slaty and mouldy beans and foreign matter removed, bean count checked per 100 g.
Stage 04RoastingRoasted to the profile the contract calls for. Time and temperature are logged per batch so the result is repeatable.
Stage 05Grinding & pressingNibs milled to cocoa mass, then pressed to separate butter from cake. Fineness held at 99.5% or better.
Stage 06Packing25 kg bags, cartons or blocks, food-grade lined, palletised and labelled with the lot number that matches the certificate of analysis.
Buying safely

Due diligence is welcome here.

Bulk cocoa attracts its share of bad actors, and experienced buyers are right to be cautious about any new supplier — particularly one quoting below the terminal market. We would rather you check us thoroughly than take a chance.

So we make the checks easy, and we run every transaction on the standard instruments the trade already trusts.
